French toast sticks!

First let me tell you this recipe is low carb, Keto, paleo, primal, and gluten free.  It's also sugar free if you don't consider Stevia "sugar".

Preheat the oven to 375°F
Have a parchment lined 9 by 14 pan ready

For the bread part you need
6 eggs
1/4th cup coconut flour
1/4th cup flax meal
1/4th cup almond flour
1 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons vanilla extract
3Tbsp coconut oil
Your sweetner of choice to taste
(I used 50 drops of Stevia)
Mixed this all well with a fork till the lumps are worked out.

I then thinly spread this over the bottom of my parchment lined dish. Popped it in the oven for 20 minutes.

When it was out I let it cool a little then sliced it in the middle then cut little sticks out of it.  I got 20 French toast sticks.

In a shallow rectangle Tupperware I mixed
2 eggs
1/2 cup unsweetened almond milk (I only had vanilla on hand)
And 2 more teaspoons of cinnamon

Wisk well, then coat the sticks in the mixture.
I did a few at a time.  I then fried them in a frying pan with Kerry gold butter till all the sides are nice and golden brown.

These are very filling!  You can top them as your diet permits.  I used sugar free maple syrup.  You could use regular syrup, honey, whipped cream, jam etc..

7 days down! And creamed kale recipe!

So I am officially 7 days into my 4th sugar detox.  I feel amazing and I'm 6lbs down so far! (My fingers are crossed that I make it back to the pre holiday weight)
I had some headaches, but am in all I feel good.  I finally jumped the gun and purchased gelatin to start taking, keeps me full for a lot longer (crazy!)  
Im over all happy, and thinking about what I would like to do next, just keep detoxing maybe? 
I came up with a new recipe!!!
Creamed Kale (21 day sugar detox approved)
2tbsp of Kerry gold butter or ghee
1lb of kale chopped  (I keep the stems but you don't have to)
1 cup coconut milk
Half teaspoon nutmeg
Salt and pepper to taste

Melt the butter in a pot and add the chopped kale, keep the flame on pretty low cover the pot and sweat the kale for about 8 minutes flipping the bottom to the top occasionally. 
When it  reduces to about half the size add the nutmeg, and salt & pepper then pour over the coconut milk.  Cook for about 3 minutes longer stirring occasionally.

This is so freekin amazing!!! Can't wait to try with spinach !

I love EBOOKS AND IM ITCHING!

unfortunatly I do not have a kindle, or an ereader, or ipad.  I'm stuck with my samsung galaxy 3.

WELL  I love these healthy ebook bundles that get put out every so often.  They are so informative and full of useful information that I may not just purchase on my own.
I'm not getting paid (I'm not that good of a blogger YET lol)
But im on the fence if I want to go for this ebook bundle.  I'm debating, its calling my name, I feel it, I'm pulled to it with force.
I love to read but have been slacking lately.  Hubby is starting an overnight job next week so I am deffinatly going to have more time on my hands!  YAY Catch up on reading!!
Anyone have any input?  Should I get, Should I not get??  LET ME KNOWWWWWWW

The easiest Pumpkin Sausage soup... EVER!!! (low carb and 21 day sugar detox friendly!)

OK for some reason over the years this is a soup is a recipe that I have adapted to almost any diet I followed.  This is one of those soups that is just about impossible to ruin.  Over the course of the chilly months you can make it with 10 different sausages, 10 different spices and it totally tastes different but is AMAZINGGGGGGGGGG (twerking it mentally)


Now I wanted to post what I made, But I'm not a very follow direction person.
Please substitute anything you want and play with this recipe, like I said its almost impossible to mess it up unless you totally over season it!

This is how I start
With your oil/butter/ghee of choice
2TBSP in  a big pot on the stove
then Add in 1-2 medium onions chopped
when they are almost caramelized add in as much chopped garlic of your choice (I love garlic, and its great for you so I usually would add about  a head chopped)
then add your sausage or ground meat of choice about 2lbs  I have made it with breakfast sausage, lamb sausage, spicy Italian sausage, sweet Italian sausage, chicken sausage.  I say ground meat of your choice, maybe you don't love pork like I do?  There are 100s of paleo sausage recipes on the net! HECK Next time I may MAKE IT WITH BACON!
After the sausage browns, then drop in about a package of mushrooms sliced, raw.  let them cook for a few minutes then add your broth.
Depending on how chunky and thick or thin you want it I'd add about 64oz of broth for this batch.  Use any broth you have.  I had a left over turkey bone broth, and a left over pork bone broth in my huge freezer and I just used one of each.
then add a 15oz can of pumpkin.
stir well and add the seasonings of your choice I'm going to make suggestions but pick and choose the ones you want to suit your mood these are the ones I have found go best: (salt, pepper, bay leaf, oregano, basil, thyme, red chili flakes, sage, rosemary, fennel seeds)    Let this all simmer for around 20 minutes, stiring every so often.
Then add a half a can of canned coconut milk, don't skimp either, use the full fat stuff.  let simmer another 20 minutes and serve.
Its really hard to mess this soup up, every single time I make it my family raves that "THIS IS THE BEST IT HAS EVER BEEN"
if you eat dairy, you can by all means use heavy cream instead of the coconut milk (this is great too)

This recipe is great for atkins, low carb high fat, keto, paleo, primal, and the 21 day sugar detox.

Just be careful, its VERY easy to over eat this soup... to the point that you want to lay down in the corner face down.. hahahaha

Chicken Liver Pate (posted for my big sister Reine)

I love chicken livers.  They are inexpensive, interesting, good for you...  (don't forget to eat your offal!)
When prepared correctly they taste amazing.  I love playing with them because if you really do them bad I can either pass them off to my animals, or toss them and they didn't cost me to much.   Well my big sister Reine just messaged me asking me for my recipe because her and her husband are in THE MOOD! (for chicken livers) LMAO

OK, So here is my recipe.  I do not usually write things down so I'm pretty much WINGING THIS!

Start off with a frying pan, fry off 4-6 slices of bacon.  Fry until almost totally crispy and take them out of the pan.  Then to the pan add a medium onion chopped up and caramelize in the pan..
I then rinse the chicken livers off and chop them in half (you want to make sure they are cooked totally through)  and toss them in the pan with the onions, and also chop up the bacon and throw that back in too..  (I am queenbacon and I do not post enough recipes about bacon!)
I then add salt and black pepper to taste, also garlic powder, sage, a little rosemary, majorym(yes i spelled that wrong I'm sorry I don't use it often lol) , thyme, and a bit of parsley, and oregano. 

When everything is done and the livers are cooked through bust out the immersion blender (stick blender) and just process everything.  Make it as smooth as you like.  
I love this stuff, it reminds me of liverwurst!  I'm sure you can make it with other livers like beef, veal, or pork.  I will have to try that myself.  besides how can something not taste good with bacon and onions???  REALLY? lol ;)  
Anyway, this is great spread on veggies or just with a spoon.  I personally like it better cold.   Its amazing spread in a lettuce leaf with tomato and a little cheese and mayo.. YUMMMMMMMMMMMMMMY!

Have my Coffee and Drink it too!!!

ok so for some reason this morning before work it was my goal to make my coffee, with coconut oil and not have a slick on top.  It has ruined my favorite to go coffee cup!  :sad:  SOOOOOOOO  I was visited by the low carb gods last night in my sleep and they gave me an idea!

This is what I did...
in a jar I placed
1 egg yolk
2T coconut oil
2T heavy cream
2 stevia packets
tiny slash of vanilla extract
then blended the life out of it with my immersion blender
it ended up with the thickness of mayo, but it tasted amazing.. better then any cream mate crap (which happens to have coconut oil in it believe it or not but hydrogenated)

I then put it in my coffee cup, with my hot coffee and it was like mixing it with cream!  NO OIL ON TOP! No SLICK! No greasyness!
ITS A FREAKY MESSAGE FROM THE LOW CARB GODS!

I mixed this with a couple extra stevias, and a 23 oz coffee, I would use half for just a mug of coffee...  and I wanted to say that this replaces my breakfast so the high in calories is fine with me.  This keeps me full and satisfied for hours.

My paleo crepes!

6 eggs
1tbsp coconut flour
Sweetner of choice
Dash of cinnamon, dash of nutmeg, dash off ginger
1 teaspoon of vanilla

I blended in my bullet, and fried then off in coconut oil in my greenie pan which happens to be the perfect size.  I then topped with almond butter and bananas

This is paleo, gluten free, primal and low carb depending on your fillings.. I plan on trying this with bacon and chocolate chips, and maybe making a low carb strawberry shortcake They are a little thick but they hold up well enough for the filing so you can eat with your hands! I may try a savory version also for some meat!

Now and Then...

So heres my story.   Its not the whole thing, but a slight breafing on who I am , who I was, how I got here, where I may be going etc...
I was thick when I was little.  I remember being heavy when I moved back to NY from Florida when I was little (around 7 or 8) but I didn't think there was anything wrong with it, I just rolled with it.  No one ever made jokes, or poked fun at me.  I didn't really realize I was "fat" until I was in my teens.  In junior high (oh wait they call it middle school now?)  and high school I was made fun of.  I didn't understand why, so what I'm thick, there were people bigger then I was!  I didn't get it, but it hurt bad.  I don't think people really understood how much the words hurt.  I avoided going to class, skipping classes that I knew people who made fun of me were in.  It sucked, I look back and think about how I played the viola and was promised scholarships when I graduated.  It upsets me but also makes me who I am and I'm ok with that. 
I got into alot of trouble for skipping classes , the dean called my mother in to school and told her I either drop out of HS and I have the chance to come back when I get my crap together, or drop out.  My mother signed me out that day, and the very same evening I got a job at a local grocery store.  I was 16.
I have been working since, I also did alot of partying and things I shouldn't have been.   I remember being 150lbs and hating it, thinking I'm so fat.  I hover around 150lbs now and think JESUS WTF WAS WRONG WITH ME?   Over time I bartended, had some really bad relationships etc.  My weight went up to around 175lbs and back down to 150 etc.  I would starve myself, excessivly diet, take tons of OTC meds like stacker 2's with ephedra (oh those were the days!).  I even found a connect from mexico to get really cheap clenbuterol and thyroid meds.  I just coudln't lose weight, or be happy with myself. 
Then I met my amazing husband, I still can't believe I met an amazing person who I had almost nothing in common with but got along great with.  I didn't want to even be apart from him.  When I saw him it was love at first sight.  We had agreat time going out, eating, eating again, partying drinking, having a great time.  I never even noticed that my weight skyrocketed to 230lbs in just a few short months (im 5'8 btw) .
I'll never forget the day, my periods were always irregular, and I was sick as a dog.  Pat (hubby) was out on long island visiting me for the weekend.  Something told me to get a pregnancy test I took one it came back positive (I took like 10 more after that I didn't even believe I could get pregnant!)  I was convinced that the nyquil I was taking must have given me a falst positive result.  I was in denial.  Pat told everyone he knew that we were going to be parents ( we were offically together 5 months)  I wasn't even sure that I wanted to be a mommy!  I told Pat, if you want this child you will marry me.  December 9th 2005 we were married.. Best decision of my life..  Now hes mine, back up you all can't have him lol...
I'll never forget my first doctors appointment, this was my wake up call.. The point I was getting to; "Ms. ***** you are morbidly obease and putting your unborn child at risk, please make sure that you do not gain more then 15lbs during this pregnancy or you may hurt your child" 
This stuck like glue, I actually didn't gain any weight during this pregnancy, and I think that being pregnant actually helped reset my metabolism from all the crash diets, and yoyo dieting.   After giving birth to my amazing daughter Emma, I vowed to be more healthy, to lose weight and be a positive influence on her.  I wanted her to know what healthy was, to be happy with who she is, and know how beautiful she is every day. 
I have tried some wacked things, like juice fasting, and the master cleanse.  I tried low carb, and it has pretty much stuck since 2007 along with Paleo/Primal. 
I dropped from 230lbs down to 140lbs in late 2009 early 2010.  I then got pregnant with my son PJ and gained over 70lbs and I'm still losing that weight.   I never really exercised, so I'm trying to get into that also.  Since having my son, and eating paleo/low carb I have noticed my sensativity to gluetin, and my body loves to cycle carbs.  Every day is a new challenge, every day I struggle to lose weight, stay positive, and move foward.   I slip up just like everyone else but I have to remember to be a positive influence on my husband and children.  Every day I tell them I love them, I tell them how amazing they are, and I thank god for sending them to me because I wouldn't be where I am today.  I have had some dark times in my past, but it helps me see how bright my future may be. 
I signed up for my first 2 runs (both 5ks in July)  and I hope to be able to save money to take a class to become a certified health coach (intergrative nutrition)  Every day I will become better for myself, and to be a positive influence on others.  I plan becoming more physically fit, and being toned and not worrying about the number on the scale so much.  I will some day soon look at myself in the mirror nude and say HOLY SH*T I LOOK AMAZING!  One day soon!  I know it will happen, it has to happen, I can do it!  Hopefully you follow me along the way.  Feel free to ask questions, or comment. 
This is my year, its an odd year (2013) and I am going to be a double odd age (33)  So this is my time to SHINE!

Fat fasting day 2 down!

So I didn't post my stats..  I started at 152 (im 5'8) today I'm at 149 after one day. 
My favorite meals are yam noodles with 1TBSP butter, 1 TBSP cream cheese, 2tbsp parmesan cheese, garlic dried onions, basil, and red pepper flakes
This is about 200 calories and 90% fat

I also love 2 oz  of cream cheese spread over 2 romaine lettuce leaves topped with mustard or siracha

I'm still doing my 100 squats a day, it's day 8. I am noticing negative changes but I figure it has to get better before it gets worse.  My saddle bags have their own zip code.. 
I'm not sure if anyone gets runners world magazine, but there is an amazing story in there about a man who almost died as a child.  Amazing inspirational story, warmed my heart so much...
I'm not even sure anyone is reading my blog, but if anyone is please let me know what you would like me to post about..
I'm off to do 100 squats. And tomorrow is a running workout day! Woooohooooo

Oh I also need to find ways to incorporate my mocha walnut butter (I made myself) and my yo cheese made from full fat organic yogurt ( strain it over night in the fridge in a colander lined with about 4 paper towels) I use the big containers, then it's like cream cheese thickness!

Trying something different..... Whats low carb to you?

So what is low carb to you?  what is low carb?  what does it mean to you?

Welllllllllllllllllllllllllll, scientifically speaking low carb is anything under 100g of carbs a day.  Personally in my book if you are under 100g of carbs this isn't low carb to me, for me.  If I'm not in ketosis I dont feel I'm eating low carb.  My doctor may say otherwise, but if there is no change on that silly ketosis stick I'm not eating low carb.  I have friends who get so excited and say KERRRRRRRRRRRY OMG IM DOING LOW CARB, I except that half a bagel I eat every day for breakfast etc etc.  I smile and nod and think negative things in my head lol...  I personally dont think this is low carb.  Getting all your carbs from one not so healthy carb source in the morning, then eating butter and steak the rest of the day isn't the way to go for me (allthough it sounds amazing lol) I am not against carb loading either (I don't think im yet physically fit enough to benefit by using it either) 
Well sorry for getting off track.  I personally benefit from being towards atkins induction level carbs(20g of carbs and lower), and VERY LOW CARB (vlc:10g carbs and less)for weightloss.. I love VLC  I feel amazing, have tons of energy, dont need that extra cup of coffee around 3pm etc.  BUT, I also like to stay very high fat, low protien low carb.  There are a few names for this floating around the net world, fat fast, nutritional ketosis etc.    So now I am going to try something new.   I'm going to cycle fat fast for 12 days with paleo for  2 days to reset and knock myself out of ketosis.  I want to turn myself into a SICK fat burning machine.  (hubbys along for the ride also)
Tomorrow I will post my stats, and if anyone wants I can also post some simple meals etc.  80% fat or higher with 1000cals-1300cals a day

For exercise I plan on keeping on with my 100 squats a day for 30 days (this is day 7 for me)  ANDDDDD my couch to 5k workouts (I signed up for 2 5ks in July) 
I also plan on adding on some other workouts here and there.  I am a fan of Chalean Johnson (chalean extreme, and turbo jam) and Callanetics (10 years younger in 10 hours, and Evolution) 

My 33rd birthday is July 10th and I plan on being in SICK shape for that birthday.  I want to look amazing, feel amazing and be amazing.  I want to own that crap! lmao
Every year I promise that this is the year.. but this year its going to be the year, no ifs ands or but(t)s
Some people like to draw, or write.. I like to better and study how to better myself.  
I'm looking to make some amazing friends along the way, and I need all of your help whos reading this to help me along the way.  This is my accountability.

Ok, I'm now off to go finish cooking my pot of tomato sauce for one of my last meals of eating high carb this weekend.  (zuccini as a noodle)

 why not blog it?  I'm sure someone else in this world is living this same life too! I  work full time, I  wear a bodybugg constantly,  and always aim for my 10k  steps!  I  follow a  low carb,  very high fat diet,  and I'm struggling to lose those last 10  to 20 lbs,  and  cycle low carb and paleo/ primal.
I  signed up for my first 2 5ks,  and this is my year! I  love odd  numbered years lol, I  will be 33  in  July and I would love to finally be fit by then.   that is my goal.   soon when I am able to save some money, I  would love to take some heath and fitness  classes and get certified to help others.
I  just started  couch to 5k  yesterday ( found a great app ),  and  also today is day 6  of 30  of  my 100  squats a day  for 30  days  challenge.   have any questions or comments feel free!
