My BIG maca MISTAKE!

So a few months back I read all the rave reviews about this magical maca root powder.  I bit the bullet after doing some (but not enough) research.  I used it once in a blue moon, but not consistently. I would take it before the family would go on a long walk, or once in a while when I would actually remember to mix it into my coffee, or smoothie shake.
Last week I decided to make it a habit.  Every morning I mixed a teaspoon into my morning smoothie.  WOOHOO! Energy poured through my veins.  The stuff is legal amphetamines.  I could run a race, clean the house, go to work, run another race and no afternoon caffeine crash!   I was so happy that I found something that made me feel amazing, gave me energy, no jitters, and a clear head!
NOT SO FAST...  This was all in the first couple of days, but lets jump to day 3.  I started to get hot flashes.  I am a cold person. I don't really sweat, and let me tell you my office in the winter at work with out my space heater on is usually around 55-60ยบ.  I wear a sweater, and I put the heater on high pumping hot air.  These hot flashes were horrible, I had to shut off the heater, take off my sweater and wipe my neck with cold baby wipes.  then I would cool off and be back to my regular over dressed heat pumping maniac.  Now along with the hot flashes was anxiety and mood swings.  Like "don't fucking look at me, I'll rip your god damn head off... oh wait why are you looking at me, please don't look at me, I want my MOMMY!!!! WAHHHH!!!"  Not cool...
Now at 35, I like to think I am not pre menopausal, and about a week after my period is over, its not quite PMS time.
Now fast forward to day 4.  Oh look a painful whitehead on my chin staring me in the face first thing in the morning. First tie going pee at work around 10am..  TWO MORE PAINFUL WHITEHEADS! By the time I went home I must of had about 10 painful white heads on my lower face.  I am going to admit I did pop them, and every single time I did and I looked in the mirror again they were right back looking me in the eye full of white ick.
Now this is when I said OK MACA is the only new thing I am doing, let me do some research.
The first thing I found was maca defiantly alters hormones, this is not something I am ok with.  I can't take any birth control (even nuva ring) because  even a speck of hormones send me into crazy town, and I am very sensitive.
The second thing I found was that people with thyroid issues should steer clear of it.  When I went home I threw it out.
Now fast forward to day 5 (no longer taking maca)  I woke up looking like the worst person on a proactive commercial.  It was very painful also, not just to look at, but to touch.  I have gotten break outs, even really bad ones that made me not want to go to school that day.  7 days later and my face is still healing, and I am still trying to get some glow to my skin back.

What did I learn from all this?  YMMV (your mileage may vary)
Not everything is great for everyone, and when taking these natural remedies, or pills, herbs, etc make sure to do your research, and please only try one thing at a time.  I know some of us health nuts walk into GNC and buy 10 new things that we have heard of and start taking them all the next day.  THIS IS A HORRIBLE IDEA.  You can't be in tune with your body by doing this, and you can't know what works, what doesn't, and what is giving you an ill effect.
I'm writing this because I think if even one person benefits from it, I have done my job and my mistake wasn't in vain.
Hope everyone has an amazing day!!

XOXO

Perfect microwave sandwich muffin

I made this recipe for the 21 day sugar detox.   Some may argue that the microwave isn't a great platform for a paleo recipe.   Butttttt, if you are in a tight spot,  worked a long day and are just ready to give up when something like this helps keep you on track it's win win for me.  I feel in love with this because it's not like a biscuit it's actually spongy and a great little muffin to put a burger on,  or my daughter gobbled up tuna salad on them and they hold together very nicely.

1 egg
1 tbsp coconut flour (I get mine at bjs)
1 tbsp ground flax meal/flour (I also picked this up at bjs they have organic and it's Delish)
Quarter teaspoon baking soda
Half a teaspoon apple cider vinegar (I used braggs)
Dash of seasoning (i usually use flavorgod garlic)
1 tbsp coconut oil

Now in a small microwave container (I use a small 2.5" square) mix all the ingredients with a fork EXCEPT THE COCONUT OIL.   Mix them all until mixed well and it looks like batter then and the coconut oil and mix well again as fast as you can to try to prevent the oil from getting hard from the cold egg.
Then I microwave on high for 1 minute 30 seconds, flip it out of the container and slice down the middle.

Oops, epic fail.

This is just a short post about being careful, and to always read labels.

Last Friday I was at the store and picked up some digestive enzymes.  I was excited, pretty hyped.  With in 48 hours of taking them I was having horrible stomach pain, actual pain not like poop or vomit, and constant headache.  I was like this for 2 days and I said to my husband, hey read that label of the enzymes in a text because I was at work, and he was home.  He answered me and told me this is an epic fail.  What did he MEAN?!?!  He soon after texted me a picture of the label that reads: "contains milk, soy, and wheat" he was very happy he didn't buy this item for me because I would have screamed at him for not reading the label.
In short,  ALWAYS READ YOUR LABELS!  I'm getting better, but great way to set back my 21 day sugar detox results.

Day 21 of my sugar detox!

And today is my sons 4th birthday!
I feel amazing, and this is my last hump (pizza, and chips at the party lol)

And here is a recipe!

Hot pumpkin coconut noatmeal
1 can full fat coconut milk
1/4th cup chia seeds
Teaspoon vanilla
Teaspoon cinnamon
Dash of ginger, nutmeg, and cloves
One green tipped banana
Half a can of canned pumpkin
1/4th cup of shredded unsweetened coconut
2 eggs

Over low heat put the coconut milk and
Chia seeds in the pan and stir.
This thickens fast! Mash in the banana, then Take the mixture of the heat and wisk in the eggs and continue to wisk over heat, then add all the seasonings and pumpkin.  Cook till you can stand up your spoon in the mixture, take off the heat, mix in the shredded coconut and serve.
This makes 2 huge servings  or 3 regular servings.
Are you not detoxing? Feel free to drizzle with honey or maple syrup, add raisins.
Low carb? Omit the banana, add protein powder.

Filling, and tasty! Happy fall!

It's day 16 and I feel alive!

My alarm went off this morning and something happened that has not happened in a long time!
I woke up awake, full of life with energy!  I feel refreshed, alert, clear mind, and I actually did an exercise DVD before work!
I feel great!
I'm actually having different cravings too.  This morning I was craving black coffee with coconut oil, and just regular eggs scrambled with butter (lately I have been loading up with veggies in my eggs). I'm also very excited that I ate a green apple last night as a snack and this morning I tested a nice medium positive for ketones on my pee strips lol.

I have a group of people competing in a fun challenge on fitbit if anyone is interested, feel free to add me queenbaconnyc@gmail.com or my husband patfrombklyn@gmail.com for some friendly competition!

Talk to ya later!

Day 6 done, and fried green tomatoes!

First I'd love to give a huge THANK you to Jimmy Moore for putting my blog in his email today about new blogs to check out. Please check out his webpage if you live in a closet and never saw it before.
Livin la vida low carb

Ok day six is done, I'm very excited, I feel great, and day 7 is a breeze.
In celebration of being almost done with my first week, and getting a shout out from a low carb great I came up with a new recipe for fried green tomatoes!
I was waking in the neighborhood and I saw a stand with tons of them and never had them before so here it goes!

6 medium sized green tomatoes sliced into quarter inch slices
2 medium sized eggs
Enough lard to cover the bottom of a frying pan.
1/2 cup almond flour
1/4th cup coconut flour
Qt teaspoon chipotle pepper powder
Qt teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste

Wash and cut your tomatoes.  In a dish wisk the 2 eggs in another dish mix all of the dry ingredients.
Put the lard in your frying pan (I used pork lard yum!) And put the temp on low to melt it and bring it up to temp to fry the tomatoes. It's up to temp when you put in a drop of water it sizzles.  Also I suggest using cast iron if you have it because it holds a constant temp.
Next dip each tomato slice in the eggs, then in the dry.
Fry the tomatoes each side for about 4 minutes on each side and drain on a paper towel.
The seasoning blend for these with the slight spicy and the tart finish at the end is hands down orgasmic..

Let me know what you think!

The morning of day 6! 5 days under my belt!

So I'm finally getting less headaches, I'm pooping regularly, and my energy is leveling out.  Just for  those who might be wondering I'm not giving up coffee, I still am going to drink it here and there.  I'm just trying to break my dependence to it.  I want to be able to sip and enjoy it, not chug it waiting for its buzz to start my day right.
Last night I stayed up a little late to make sure I got my steps in, so lots of jogging on my rebounder! I also did my 100 squats in during the day.
Last night I finished during my 21 day sugar detox ketchup into yummy Smokey bbq sauce!  It was amazing on a burger.

I forgot to post my starting weight for the detox (169.3lbs) and now that I have 5 days in I'm down to  164.3 which I'm totally tickled pink.  I'm in the beginning of the time of the month from HELL!  I actually think the squatting has been helping with cramps!
Today shall be an eventful day, my daughter will be marching with her church/girl scout group in the Columbus day parade.   10k steps here I come!

I'm about to flip through my detox books for something to make for breakfast, have a great day everyone and thanks for reading!

5lbs down woot woot

Day 5 am, woohoo day 4 is done!

Even less headaches today. Yayyyy!  I have to admit, I didn't make my 10k steps today, but I did do my 100 squats.
I plan on doing at least 25000 steps this weekend to make up for any short comings.
Another hurdle is aunt flo just decided to visit, which would explain cramps and headaches also.  No cravings though, and I still have not bit anyone's head of with the lack of coffee!

Next weekend I am doing a walk for breast cancer. Any donations would be greatly appreciated!  Thanks so much in advance.  Please click here to donate

Morning of day 4/day 3 completed

So I'm the days done for my sugar detox.  I'm feeling a little better, not constipated anymore (tmi) lol yay! I'm still getting headaches, but not as bad or as often.
My appetite is almost non existent also!
Breakfast yesterday was a chicken sausage, spinach sauteed in garlic and coconut oil and garlic and 2 eggs over easy.
Lunch was baby shrimp with steamed broccoli, carrots and cauliflower with lemon and Kerry gold butter.
Dinner was slow cooker chicken adobo from the 21 day sugar detox cookbook. One small improvise was I used a cat iron skillet and chicken breast.  It was amazing!
I made my 10k steps , and 100 squats.
I'm excited, I think I need to step up the exercise though!  Any suggestions?

Day four here I come!

Day 2 of my sugar detox done!

Ok so detoxing from coffee and artificial sweeteners is worse then I suspected.  I could hardly eat breakfast yesterday, and had to pop aspirin multiple times through the day.
Another letdown is I didn't make my 10k steps for the day. I had it planned in my head that I was going to jog on my rebounder, but headache and feeling of being constipated (sorry tmi) was telling me otherwise.
Fortunately for me I got my squats in for the day!
Breakfast was soft boiled eggs on top of cabbage and spinach fried in a little grass fed pork lard.
Lunch was beef burger with cauliflower, broccoli, and yellow and orange carrots with a mustard vinegar dressing I made.
Dinner was another spinach salad topped with Turkey burger.

Let me share my dressing recipe it's super easy, super delish, and so much you can do with it, not just for salad I had it on streamed veggies and it was great.

1 tbsp spicy or course ground mustard
1 tbsp olive oil, avocado oil, or mct oil
1 tbsp of vinegar (I have used Apple cider or balsamic, both work)
Fresh cracked pepper
Wisk it up and put it on!

What I missed about the sugar detox is the simplicity of it all.  It really is easier just eating clean natural food.  You should try it some time!

Any questions or hints? Please feel free to comment!

Day one of my 6th 21 day sugar detox

So yes, this is my sixth sugar detox (the 21 day sugar detox) and even one day in, I'm already convinced that this time I will see the most improvements.
I weigh in yesterday morning at 169.3 lbs.
I'm coming off of eating low carb high fat, or Keto and now looking to go back to my paleo ways but keep it low carb so maybe I can be successful at improving my health and shedding some weight and gaining some much needed muscle.
Now for day one most of my day was plagued with horrid headaches.  I thought at first that it might have been because I skipped my morning coffee, but after gulping down some rocket fuel (stumptown cold brew) and still couldn't shake the feeling realized it's probably stress and cutting artificial sweetners.
Breakfast was eggs with spinach cabbage, onions and peppers.
Lunch was chicken with Chinese veggies (Fed the baby corn to my daughter lol)
And dinner was salad with a turkey burger on top. Now for a snack is the fun part.  Hubby and I shared a granny smith Apple.  I bit into it and I mine add well sucked on a lemon!  Then I remembered all my past detox, and I'm so excited that over the next 3 weeks that Apple will transform from a face squishing sour puckering fruit to a juicy god sent sweet garden of Eden heaven evoking sweet treat.

I can't wait!

Ps did my 6th day of 100 squats a day, and 10k steps a day

7 days down! And creamed kale recipe!

So I am officially 7 days into my 4th sugar detox.  I feel amazing and I'm 6lbs down so far! (My fingers are crossed that I make it back to the pre holiday weight)
I had some headaches, but am in all I feel good.  I finally jumped the gun and purchased gelatin to start taking, keeps me full for a lot longer (crazy!)
Im over all happy, and thinking about what I would like to do next, just keep detoxing maybe?
I came up with a new recipe!!!
Creamed Kale (21 day sugar detox approved)
2tbsp of Kerry gold butter or ghee
1lb of kale chopped  (I keep the stems but you don't have to)
1 cup coconut milk
Half teaspoon nutmeg
Salt and pepper to taste

Melt the butter in a pot and add the chopped kale, keep the flame on pretty low cover the pot and sweat the kale for about 8 minutes flipping the bottom to the top occasionally.
When it  reduces to about half the size add the nutmeg, and salt & pepper then pour over the coconut milk.  Cook for about 3 minutes longer stirring occasionally.

This is so freekin amazing!!! Can't wait to try with spinach !

My apologies, but I'm making it up to you!

So allot has been going on this lady month.  Unfortunately my father in law (hubbys step dad)  had been very sick and recently passed.  I give this man credit though, he's been kicking cancer arse for years now (14) and he was also on oxygen for emphazima (sp). This man was an amazing grandfather to my children, and not a day will go by that I won't think about him.  But I do know that now my children have a wonderful guardian angel, and he is no longer in pain.  I hope some day to run in the nyc marathon, just like him!

I sugar detox through this whole ordeal, my third round.  My 21 days are over but I'm enjoying my self, my creativity, my meals, etc.  I only lost 3lbs (less then I hoped for) but I didn't gain, I feel great, and I'm not disappointed, and for fucks sake I didn't gain! Wahooooo!
Please stop by my instagram and check out some of my meal ideas and reviews of recipes from the book...  hopefully if I'm lucky I will get the chance to review the cook book in a couple of weeks!

Now hears where I make it up to you!  My newest invention, and a great thing to do with my mini silicon loaf pans.

21 day sugar detox approved almond joy bars!
This serves 2
In one bowl/blender cup
2TBSP coconut oil
2TBSP coconut butter
Half a green tipped banana
1tsp cocoa powder

Blend till totally smooth
Then barely cover the bottom on your candy holder and freeze till almost solid
I then placed a few almonds in it

Then in another blender bowl blend other half of banana
3TBSP dried unsweetened coconut
2TBSP canned full fat coconut milk
Half a teaspoon of vanilla

Then scoop this mixture into the centers of the bars (you may have a little extra, just eat that shit when no one is looking it tastes great)
Put in the freezer for half hour then top the bars with the remaining chocolate and freeze for about an hour....

This is amazing! You WILL THANK ME LATER! LOL

My 21 day sugar detox book review!

I  have gained and lost weight over the years, I  have even done some unsuccessful whole30s.   Not until I  read the ebook  and did my first sugar detox  did I  realize how addicted to sugar I  was.  I  was  blind to it actually.  I  don't think you realize how much we depend on sweetness.  Even following a  strict paleo diet I  felt myself making excuses "but  this is natural,  it's ok".  Some Stevia  in my coffee, a  few  pieces of fruit,  some paleo pancakes topped with  grade b  maple syrup,  date  balls rolled in  organic cocoa powder.  Then I  realized 2  packets of  Stevia  turned to 3-5,  then when I  was out with no Stevia a  little  splenda  is  ok,  I'm  sick of water I  want  juice and Crystal lite!  Ugh  it  got  ugly!
As  soon  as I  saw  this book  was  coming in print I  did a  dance, I  was  like Veruka  in the  chocolate factory "dadddddy I  want  it  now!"
I'm  in  love,   this book  is  great.
I  appreciate the  different levels   because now my non paleo friends have something they can do,  and I  can help them along the way.
I'm  in  love with the recipes too,  even my children love them ( who are not doing the detox right now).  I'm  not sure my daughter will never eat another  ketchup  again!   the savory biscuits are outstanding too!   We  used them to make breakfast sandwiches,  and plan on making use of them for hamburger buns.
I'm sleeping better,   I'm starting to get that glow back in my skin,  and  my raging appetite is at bay.   oh and I'm only on day 4  of this  detox! (my  third round).   I'm  also  using this detox as a stepping stool to help break my addiction to my scale.  I  vowed to judge myself by how I  feel and how I look and not what the scale says!
I  will post another review  after I'm done with this detox,  oh and you might want to buy 2  of  these,  because you are not going to want to let anyone borrow this book.
make sure you check out the extra guides to supplements,  smoothies,  yoga,  exercise,  quick  start,  and faqs  that you can download  after you purchase so you can get started before your book arrives.
if you need more motivation to get this book,  check out my instagram,  I'm  posting a  ton of  pictures of the recipes from the book,  and  some of my own that I have made for my own detox.

Ps I was no way compensated for this review, I believe in this so much that I purchased the ebook (before print) and the book! I'm a few weeks I'll be buying the recipe book!!!!

I love EBOOKS AND IM ITCHING!

unfortunatly I do not have a kindle, or an ereader, or ipad.  I'm stuck with my samsung galaxy 3.

WELL  I love these healthy ebook bundles that get put out every so often.  They are so informative and full of useful information that I may not just purchase on my own.
I'm not getting paid (I'm not that good of a blogger YET lol)
But im on the fence if I want to go for this ebook bundle.  I'm debating, its calling my name, I feel it, I'm pulled to it with force.
I love to read but have been slacking lately.  Hubby is starting an overnight job next week so I am deffinatly going to have more time on my hands!  YAY Catch up on reading!!
Anyone have any input?  Should I get, Should I not get??  LET ME KNOWWWWWWW

The easiest Pumpkin Sausage soup... EVER!!! (low carb and 21 day sugar detox friendly!)

OK for some reason over the years this is a soup is a recipe that I have adapted to almost any diet I followed.  This is one of those soups that is just about impossible to ruin.  Over the course of the chilly months you can make it with 10 different sausages, 10 different spices and it totally tastes different but is AMAZINGGGGGGGGGG (twerking it mentally)

Now I wanted to post what I made, But I'm not a very follow direction person.
Please substitute anything you want and play with this recipe, like I said its almost impossible to mess it up unless you totally over season it!

This is how I start
With your oil/butter/ghee of choice
2TBSP in  a big pot on the stove
then Add in 1-2 medium onions chopped
when they are almost caramelized add in as much chopped garlic of your choice (I love garlic, and its great for you so I usually would add about  a head chopped)
then add your sausage or ground meat of choice about 2lbs  I have made it with breakfast sausage, lamb sausage, spicy Italian sausage, sweet Italian sausage, chicken sausage.  I say ground meat of your choice, maybe you don't love pork like I do?  There are 100s of paleo sausage recipes on the net! HECK Next time I may MAKE IT WITH BACON!
After the sausage browns, then drop in about a package of mushrooms sliced, raw.  let them cook for a few minutes then add your broth.
Depending on how chunky and thick or thin you want it I'd add about 64oz of broth for this batch.  Use any broth you have.  I had a left over turkey bone broth, and a left over pork bone broth in my huge freezer and I just used one of each.
then add a 15oz can of pumpkin.
stir well and add the seasonings of your choice I'm going to make suggestions but pick and choose the ones you want to suit your mood these are the ones I have found go best: (salt, pepper, bay leaf, oregano, basil, thyme, red chili flakes, sage, rosemary, fennel seeds)    Let this all simmer for around 20 minutes, stiring every so often.
Then add a half a can of canned coconut milk, don't skimp either, use the full fat stuff.  let simmer another 20 minutes and serve.
Its really hard to mess this soup up, every single time I make it my family raves that "THIS IS THE BEST IT HAS EVER BEEN"
if you eat dairy, you can by all means use heavy cream instead of the coconut milk (this is great too)

This recipe is great for atkins, low carb high fat, keto, paleo, primal, and the 21 day sugar detox.
If you try something different, have any questions or anything PLEASE COMMENT!

XOXOXO

I'm sorry that I don't have exact measurements, but I PROMISE, this soup is SOOOOOO EASY!

Just be careful, its VERY easy to over eat this soup... to the point that you want to lay down in the corner face down.. hahahaha

Chicken Liver Pate (posted for my big sister Reine)

I love chicken livers.  They are inexpensive, interesting, good for you...  (don't forget to eat your offal!)
When prepared correctly they taste amazing.  I love playing with them because if you really do them bad I can either pass them off to my animals, or toss them and they didn't cost me to much.   Well my big sister Reine just messaged me asking me for my recipe because her and her husband are in THE MOOD! (for chicken livers) LMAO
My sister has a blog also!  go check her out! she also has a book on amazon!  She writes poetry :)
My Sister Reines Blog!

Here's a fun picture of our family wayyyyyyyyy back in the day.. HELLO 1984!! BTW Reine, nice socks with your open toed shoes!  XOXOXO

OK, So here is my recipe.  I do not usually write things down so I'm pretty much WINGING THIS!

Start off with a frying pan, fry off 4-6 slices of bacon.  Fry until almost totally crispy and take them out of the pan.  Then to the pan add a medium onion chopped up and caramelize in the pan..
I then rinse the chicken livers off and chop them in half (you want to make sure they are cooked totally through)  and toss them in the pan with the onions, and also chop up the bacon and throw that back in too..  (I am queenbacon and I do not post enough recipes about bacon!)
I then add salt and black pepper to taste, also garlic powder, sage, a little rosemary, majorym(yes i spelled that wrong I'm sorry I don't use it often lol) , thyme, and a bit of parsley, and oregano.

When everything is done and the livers are cooked through bust out the immersion blender (stick blender) and just process everything.  Make it as smooth as you like.
I love this stuff, it reminds me of liverwurst!  I'm sure you can make it with other livers like beef, veal, or pork.  I will have to try that myself.  besides how can something not taste good with bacon and onions???  REALLY? lol ;)
Anyway, this is great spread on veggies or just with a spoon.  I personally like it better cold.   Its amazing spread in a lettuce leaf with tomato and a little cheese and mayo.. YUMMMMMMMMMMMMMMY!

Hope you enjoy!  I love you Reine!

Have my Coffee and Drink it too!!!

ok so for some reason this morning before work it was my goal to make my coffee, with coconut oil and not have a slick on top.  It has ruined my favorite to go coffee cup!    SOOOOOOOO  I was visited by the low carb gods last night in my sleep and they gave me an idea!

This is what I did...
in a jar I placed
1 egg yolk
2T coconut oil
2T heavy cream
2 stevia packets
tiny slash of vanilla extract
then blended the life out of it with my immersion blender
it ended up with the thickness of mayo, but it tasted amazing.. better then any cream mate crap (which happens to have coconut oil in it believe it or not but hydrogenated)

I then put it in my coffee cup, with my hot coffee and it was like mixing it with cream!  NO OIL ON TOP! No SLICK! No greasyness!
ITS A FREAKY MESSAGE FROM THE LOW CARB GODS!

I mixed this with a couple extra stevias, and a 23 oz coffee, I would use half for just a mug of coffee...  and I wanted to say that this replaces my breakfast so the high in calories is fine with me.  This keeps me full and satisfied for hours.

Please if you try this with coconut milk, or almond milk instead let me know how it turns out!!!!  please leave me a comment!

Yum yum yum

So I promised myself I'd post this recipe, and I slacked big time!
This is a mug cake I made the other day.

The cake is
1 egg
1T almond flour
1T flax ground
1T coconut oil
3 Stevia packets
1tsp vanilla extract
Dash of cinnamon
Dash of ginger
Dash of nutmeg
Mixed well with a fork and nuked for 90 seconds

The topping is
1T chia seeds
3 strawberries
I blended this in my magic bullet for about 30 seconds then chilled in the fridge for an hour

The stuffing in the middle is
2T cream cheese
Stevia to taste
.5 teaspoon vanilla extract
Nook until soft and mix...

Then sandwich that yummy ness!

This is high in calories. But I have an almost 3yr old that doesn't allow me to over eat any treats.

Gluten free, low carb, and could be paleo or primal if you sub the sweetner or cream cheese...
